Alright New Year’s Resolutioners, I’ve got another healthy and hearty Italian dish for you! Like the Chicken Abruzzi that I posted a couple weeks ago, this soup is low in calories and fat, but high in everything else (mainly flavor!). When I was growing up minestrone soup was a constant winter favorite in our home, and I always lumped it into the “comfort food” category (which we all know, tends to be the good foods that aren’t so good for you). But it wasn’t until I started making it for myself that I realized how healthy it actually is. Loaded with vitamin-packed veggies, protein-rich beans, and complex carbohydrates, this soup has everything you (and your healthy new body) need right in one bowl!
Today is January 13th, 2015 which means that it’s been exactly one year since I sent my first post out into the blogosphere. When I started this little food blog of mine I had only one goal in mind, and that was to keep myself busy during the long Kansas winter. Never in my wildest imagination did I think that 12 months later, after moving to sunny Texas, I would still be chugging along and enjoying myself immensely! Writing this blog has taught me so much about cooking, food styling, and photography, but above all, it’s taught me how to laugh at myself. You see, not every recipe I think up is a winner, in fact, many recipes are complete disasters. I’m not kidding, there were some awful things that came out of my kitchen this year. Typically a year in review is supposed to highlight the best and the worst, but when I was writing this post I realized that you guys already get to see the best on a regular basis (those are the recipes that actually make it onto the blog each week). Instead, I thought you would appreciate seeing the worst; the recipes that end up on the cutting room (or kitchen) floor, so to speak. Because really, what’s more fun than fails? Continue reading
Aaaaaand the Holidays are over. Did everyone survive? Did we all make it out ok? Let’s do a quick headcount, shall we? 1, 2, 3… I don’t see Rodger – can somebody check on him please… 4, 5, 6, 7…. Yes, it looks like we’re all here. Whew!
So I took a couple weeks off to celebrate and spread good cheer, and let’s be honest, EAT! But now I’m back and ready to fill your inboxes with delicious, wholesome meals intended to wean you off of those calorie-laden dishes that we’ve all grown accustomed to these past few months. Alright, I know that I posted a meatloaf recipe last week so it might seem kind of redundant to post another one this week, but bear with me. Unlike Friday’s Honey Glazed Pear, Sausage, & Sage Meatloaf (which was delicious, but took a bit of hands-on cooking), this meatloaf only calls for three simple ingredients and takes less than 10 minutes to prep. No really. And because I’ve recently been trying my hand at some gluten free cooking, it’s made sans bread — which is great for all of you who have a wheat sensitivity. It’s finally December, the best month of the year, which means it’s time to bust out the holiday decorations and start cooking something other than turkeys and pumpkins! And what better way to kick off this joyful season than with a new take on an old favorite. With this thought in mind, I took my standard meatloaf recipe and jazzed it up with some festive flavors like pears and cinnamon, then topped it off with a sweet drizzling of honey. This meal is so festive, that for a spilt second I considered naming it Merry Meatloaf, but opted instead for this much longer and more descriptive (read boring) title.
